This tea is inspired by Savannah's own Flannery O'Connor; Southern Gothic tendencies such as peacock ownership or caustic wit amongst friends not guaranteed. An outstanding blend of quality teas; aromatic and sparkling Himalayan Oolong, Temi Sikkim - a high grown tea from India with muscatel notes, full bodied Assam, and a handful of Silver Needles. The result is a most beautiful amber liquor with an unbelievably fragrant nose.
FLANNERY'S MIDDAY BLEND
1. Bring fresh, cold water to a rolling boil.
2. Swirl boiling water in the teapot or mug for 1 minute to warm it up, discard water.
3. For each cup of tea place 1 level teaspoon of tea leaves in the tea infuser (a three finger pinch works better for these leaves - using thumb, pointer and middle finger, grab the volume of leaves equal to the size of a grape).
4. Pour boiling water over tea leaves, cover and brew for 3 minutes.
5. Remove infuser and leaves, and serve.
6. Can be rebrewed several times, adding 1 additional minute to the brew time.
